About the Role

Rich's Tri-Tip is hiring a BBQ Line Cook to join our team in San Luis Obispo. You'll work directly with our pitmaster and line crew to grill, slice, and plate Santa Maria-style tri-tip, smoked links, ribs, and sides during high-volume lunch and dinner service. We're looking for someone reliable, fast-moving, and obsessive about temp control and consistency. Prior line, grill, or BBQ experience is a strong plus, but we'll train the right person who shows up on time and takes the craft seriously. Schedule is flexible and we work with school and second-job schedules where we can. This is a hands-on role — expect heat, smoke, and a fast pace — and a real path to lead line and assistant pitmaster for people who put in the work.

What you'll do

  • Grill, slice, and plate Santa Maria-style tri-tip to spec on a red oak fire.
  • Maintain pit and grill temps, fire management, and product hold times.
  • Prep daily proteins, rubs, and sides per recipe cards.
  • Keep the line clean, stocked, and ready for rush.
  • Communicate clearly with cashiers and runners during high-volume service.
  • Follow all food safety, allergen, and ServSafe standards.

What we're looking for

  • Reliable transportation and consistent attendance.
  • Availability for nights, weekends, and at least one weekend day.
  • Ability to stand for full shifts and lift up to 50 lbs.
  • Clear communication in English with team and customers.
  • Food handler card or willingness to obtain one within 30 days.

Nice to have

  • Prior line cook, grill, or BBQ experience.
  • ServSafe certification.
  • Spanish proficiency.
  • Experience working live-fire or wood-burning grills.
